Where we learned them

Two kinds of Chinese food, both done properly.

In the 1990s, our head chef Khai Phung cooked at the Mongolian Food Experience in the Kelly Ramsey Building downtown, learning the trade under Siu To. That kitchen cooked two kinds of food side by side: Canadian-style Chinese dishes like ginger beef, and traditional Chinese dishes.

Khai learned to do both properly. He and Helena opened Treasury Restaurant in north Edmonton in 2003, and after the 2012 fire, the family rebuilt as Grain of Rice in 2016. The classics came with us.

Our family is Hoa, Chinese Vietnamese from Chợ Lớn in Saigon. So next to these dishes you will find pho and vermicelli bowls, each cooked its own way. Not fusion. Both, done right.

Questions

Good to know.

Is gongbao chicken the same as kung pao chicken?

Yes. Gongbao is the Mandarin spelling; kung pao is the older spelling most menus in Canada use. Ours is chicken with celery, bell peppers and onions in a spicy, savoury oyster sauce.

Do you have sweet and sour pork?

Not on our menu right now. If you want sweet and tangy, try our Orange Chicken, or Deep Fried Wontons with sweet-and-sour dipping sauce.

Is your orange chicken made in house?

Yes. Everything on this page is made from scratch in our kitchen, including our orange sauce.

What is Canadian Chinese food?

Chinese dishes that grew up in Canadian restaurants. Ginger beef is the best known one in Alberta, widely credited to chef George Wong at the Silver Inn in Calgary in the 1970s.

Is your chicken halal?

All of our chicken is halal friendly, but it shares woks and pans with pork and beef. Grain of Rice is not a halal certified restaurant. Read the details.

Are these dishes gluten free?

No. None of these classics are on our gluten friendly list, and Orange Chicken and Lemon Chicken are battered. See our gluten friendly menu.
